Enzo bianchi 2007
Description:
The rich varietal flavor of the Cabernet Sauvignon grape grown in
Argentina and aged in new oak results in a harmonious, velvety wine
of great balance and prominent personality. This vintage is an
intense and seductive violet red color, showing fruit aromas of
plums, black cherries and mulberries mixed with spices, and leading
to mature fruit and spice on the palate. As with most Enzo vintages,
there is a long, smooth, very pleasing finish.
Winemaker’s Notes:
The grapes come primarily from Finca Asti, situated in Las Paredes
in San Rafael, Mendoza, around 750 meters above sea level. The
grapes for Enzo 2007 were hand-harvested and specially sorted prior
to crushing to eliminate any unripe or compromised fruit. After
destemming but before pumping into the fermentation tanks, a
second sorting removed pieces of stems and fruit not fully colored
and a roller pressing took place. The wine went through classical
fermentation in stainless steel tanks, and cold maceration, with
frequent pump-over. Total time on skins was 25 to 30 days. The
wine spent 14 months in 100-percent new oak (90-percent French
oak and 10-percent American barrels). After stabilization, filtering
and bottling, the final wine was bottled-aged an additional 24
months.
